Chicken Soup with Cream of Wheat Dumplings

This southern girl (jojo) thinks it sounds yummy. I bet you could add shredded cooked chicken to the broth to make it like the "chickin an dumplins" from my childhood.

Broth:

2 cans ff chicken broth,
1/2 cup each chopped onion, celery, carrots, frozen peas,
1 bay leaf
1/4 teasp thyme
1/4 teasp marjoram
pepper
mix all together and cook until veggies are tender.

Dumplings:

3/4 ff milk or water (I use milk)
1/4 cup cream of wheat (I use the cooks in 10 minute one) little more substance
dash of salt
1 large egg
1 tablespoon olive or canola oil
mix together cream of wheat and milk or water and salt. I follow microwave directions to cook. When cooked remove from oven and stir in oil till well blended. Add egg and mix well, drop by spoonfuls into boiling soup, COVER, lower heat, and cook for 10 minutes.
DO NOT REMOVE COVER WHILE COOKING, DUMPLINGS WILL DEFLATE.

When serving, gently remove dumplings into each bowl add soup. Enjoy. This is my favorite food.
 
You can do this with only one can of ff chicken broth if dumplings only. I do this often. I just love the dumplings.
