Okay, I have to admit that I haven't tried this recipe, but it looks interesting and would make good use of the Turkey Chorizo Sausage that's already posted. Adapted from the same cookbook.
Since making the sausage is a bit tedious, you could just saute onions and spices with ground turkey and take it from there.

4 oz. turkey chorizo sausage, or ground turkey (see comment above)
1 large onion, chopped
1 bottle (~8 oz.) clam juice (yes, it's Core!)
1 1/4 C Chicken broth
2 t cumin seeds
1 1/2 C couscous
1 med red bell pepper, seeded and chopped
8 oz tiny cooked shrimp
lime wedges


  1. Crumble sausage or ground turkey into a non-stick skillet. Add onion and brown over medium heat 15-20 minutes. Add a little water if it gets too dry before onions have browned.
  2. Add clam juice, broth, and cumin seeds. Bring to boil, stir in couscous.
  3. Cover pan, remove from heat, and let stand about 5 minutes, until liquid is absorbed. Stir in bell pepper and top with shrimp. Serve with lime wedges
