"jmmoon" from the WPA board posted this recipe and I thought it sounded great. She generously allowed me to post it- the
comments at the bottom are hers. It's an adaptation of an old WW recipe.
Ingredients:
2 cups chopped cauliflower 1/4 c ea. chopped carrot, celery, onion
1 cup water 1 chicken boullion cube (or use a can of broth instead of the cube and the water above) 1 cup FF milk 2
cups sliced mushrooms 1 clove garlic, minced 1 T fresh parsley (or 1 t dry) 1/2 t thyme pepper to taste
Procedure:
Combine cauliflower, water, carrot, celery, onion, and boullion cube in a soup pot. Boil, then simmer until tender. Remove
from heat and add milk. Puree in a blender in batches. (I've been known to just use a potato masher).
Saute mushrooms
and garlic in Pam (or a little olive oil).
Blend mushrooms into puree on stove, season with parsley, thyme, and pepper.
Simmer together for about 10 minutes.
Comments:
This is very flexible---I just throw it together without measuring, but I know some people like to measure. Great as
a side dish with something like chicken.
