Ingredients:
1 lb low-fat ground turkey or ground beef
1 onion
1 packet taco seasoning
1 can corn
1 can black beans
1 can pinto beans
1 can red kidney beans
1 can Rotel (any flavor, I like Mexican)
1 can stewed tomatoes (again, I like Mexican flavor)
Procedure:
Cook onion and turkey in large stockpot with non-stick spray. When cooked, just add the rest of the ingredients (I drain
the cans). You might want to add some water to make it more soupy. Stir and serve!
Serving Size:
For Flex, give each 1 cup serving about 3 points

I like to serve with fat free sour cream and fat free shredded cheddar.
